Zucchini Loaf

So this loaf is just DELICIOUS! Best served toasted xx

Ingredients
1/2 C Pepitas + more to sprinkle on top
1 C Wallnuts
1/4 C Chia Seeds
1/2 Tsp Baking Soda
1/2 C Arrowroot Flour
1 C Skinless Almond Meal
6 Organic eggs
1 Grated Zucchini
1 Tbs Coconut Oil

Method
Preheat oven to 180 degrees. Prepare loaf tin and line with baking paper.
Crack the Eggs into a cake mixing bowl. Turn the mixer on until the egg is slightly whipped.  Add all other ingredients in and turn on slow. Mix until combined. Pour into loaf tin and bake for 30 mins or until a skewer comes out just dry.
Loaf is best sliced and toasted xx
